Easy Toddler Meals

Planning meals can get overwhelming sometimes for kids especially ones who are picky. In my house I have a 2 year old who often gets burnt out on the same stuff all of the time. I ABSOLUTELY LOVE when other moms post photographs of their meals because I think most of us can relate that the more meal ideas the better! Salsa Verde Tacos

I know what you are all thinking… “Wow this girl posts about a lot of Mexican food!” Well you are not wrong.. I do add Mexican Night to my meal plan at least once a week. My husband is OBSESSED. I just wanted to share with you a favorite slow cooker recipe that we make at our house. I love this recipe because its easy, It makes quite a bit and it freezes really well for a make ahead freezer meal if that’s what you are looking for.

Ritz Cracker Chicken

In our family we have a little toddler who was diagnosed with food allergies just before his first birthday so often times meals can be challenging. I am constantly looking for new recipes to make meals fun and exciting instead of the same ol’ stuff all of the time.

My son is allergic to Milk, Eggs and Peanuts. Most people confuse a milk allergy with being Lactose Intolerant but there is actually a difference. It is the protein that is in the milk that causes our little guys throat to close not the dairy part. All animal milk makes this same protein. So it is Almond and Coconut milk in our house.

I have found that there is often dairy in breadcrumbs that you get at the store. So I decided to make my own. I tried this out about a month ago and it was a BIG hit at our house. I am in no means the best cook out there and my chicken always turns out dry so I learned about a trick that helps keep chicken stay moist in the oven and not too dry. So here is my take on Moist Ritz Cracker Chicken.

30 Minute Navajo Tacos


Ever since I can remember Navajo Tacos have been one of the biggest traditions in my family. My grandmother was they key to this tradition. She would make them at every big family gathering that we would have. Camping out at the Ranch. The Fourth of July. Just visiting at her house. When the church missionaries would come over for dinner she would make them then as well and end dinner with delicious peach cobbler. From what I hear, the missionaries would count down for the next time they would be able to eat the famous Navajo Tacos that were prepared by my Grandma.

Garlic Ranch Dressing

Ranch Dressing is such a wonderful thing! Its one of the best dipping sauces out there in my book! I always feel like when you buy it in a bottle or jar at the store it always seems to taste different and I could never truly pick a favorite.
