Sheet Pan Dinner

I wanted to share this AWESOME Sheet Pan Dinner idea with you. It is so easy, Healthy, Allergen friendly and great for the whole family. There is absolutely no prep work to this and you can alternate it and add or subtract whatever you like.

Life always has a way of getting hectic sometimes or maybe all of the time for some. Call me lazy or what have you but if I can find something to make my day easier I will gladly do it and I know i’m not the only one out there. Eating is something we have to do on a daily basis to be able to live or function properly throughout the day. So we are constantly trying to find things to fuel our bodies. Unfortunately busy schedules leads to poor food choices. I have always thought that eating healthy meant meal prepping and making meals from scratch so I am guilty of grabbing easy nutrition-less foods.  When it comes to cooking I absolutely dread doing it. Although I love baking, Cooking and prepping meals is an absolute drag for me. I have mentioned before that I have a 2 year old child who needs allergen free foods so meal planning and trying to find meals for the whole family can be a bit challenging. Often times I have to make separate meals to accommodate for his allergies.

Almost 2 weeks ago my husband came home from work one night and announce he is officially done with carbs and is giving into this Keto Diet everyone has been RAVING about. You can imagine what was running through my mind at this point. (What am I going to do if I cant cook from the box!). I became a little panicked when I heard this news that I know had to find meals for not only my allergen free toddler but now for my carb-less husband. I immediately took to Pinterest and pinned my little heart out for recipes.

The thing about Keto is that I feel like there is a lot of produce involved so I find myself going to the store more often but on days where you don’t have time or just plain don’t feel like leaving the house this Sheet Pan Dinner is absolutely INCREDIBLE and there is hardly any prep work involved. I found a recipe for sheet pan dinners on pinterest one day and we absolutely LOVED the dinner. The other night I realized I really needed to grocery shop but It was dinner time and needed to just use what I had in the freezer so here is my take on this Sausage Sheet Pan Dinner.

  • 2 Packages of Polish Linked Sausage
  • Carrots
  • Frozen Broccoli
  • Green Beans
  • 3 Table Spoons Olive Oil
  • 2 Teaspoons Garlic Powder
  • 2 Teaspoons Onion Powder
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper

Preheat oven to 425 Degrees.

I keep these Polish Sausage Links in the freezer and they thaw out really quickly. I sliced them up and threw them onto an oversized baking sheet covered in tin foil. I absolutely love the giant baking sheets because they hold more food as well as large sheet cakes or even higher quantities of cookies for family gatherings or parties. I have only been able to find them on Amazon or Costco.  I then threw on whatever vegetables I had laying around that needed to be eaten.

I used 1 pound of carrots, Green Beans, and Broccoli Florets.

You honestly cannot ruin this dinner. You could add potatoes to this if you wanted to as well but since I was going for Low Carb I didn’t. I have also added onions and bell peppers to this before but I didn’t have those items on hand at the time.

Next Drizzle olive oil and sprinkle on the ingredients evenly over the pan. Using your clean hands toss the ingredients together and spread them evenly over the baking sheet.

Pop the Sheet in to oven until vegetables are cooked through. Tossing occasionally for an even cook.

Our family absolutely LOVES this dish. It is so easy and convenient and the only thing you do is slice and toss! We have also done this using precooked chicken and even flank steak. Both have turned out just as great.
